1. Introduction
Finding a vegan alternative to traditional jello that delivers the same texture, flavor, and delight can be a challenge.
Regular jello relies on animal-derived gelatin, which isn’t suitable for those following a vegan or plant-based diet. But with high-quality vegan jello powder and a few essential ingredients, you can create a plant-based version that's every bit as delicious!
In this article, we’ll share a vegan jello recipe, inspired by our premium jelly powder options, that’s perfect for desserts, parties, or even a quick snack.
2.Ingredients (For 1kg Vegan Jello)
Using the recipe for GB101 jelly powder as a base, here’s what you’ll need to create a vegan jello with a similar texture and taste to the classic version:
Part A:
- GB101 Vegan Jelly Powder: 8g
- Fructose Syrup: 170g
- Sugar: 30g
- Acesulfame Potassium(optional, for sweetness): 0.19g
- Water: 800g
- Potassium Sorbate(preservative): 0.45g
Part B:
- Citric Acid: 2.5g (for tartness and flavor balance)
- Sodium Citrate: 1g (to control acidity)
- Malic Acid: 0.5g
Part C:
- Flavoring of Choice: 1g (such as strawberry, lemon, or raspberry)
3.Instructions
Prepare Part A:
- Combine the GB101 jelly powder with sugar in a bowl.
- Slowly add this mixture into cold water while stirring continuously.
- Add the fructose syrup, acesulfame potassium (if using), and potassium sorbate. Stir well and bring the mixture to a boil.
- Allow it to cool slightly before proceeding.
Prepare Part B:
- Dissolve citric acid, sodium citrate, and malic acid in a separate small container with a little water.
Combine and Add Flavor:
- When the mixture in Part A has cooled to about 75°C, add the flavoring (Part C) and the prepared acid solution (Part B).
- Stir thoroughly until well combined.
Pasteurize and Set:
- Pour the mixture into molds, cover, and pasteurize by heating at 85°C for 15 minutes to ensure stability.
- Cool to room temperature, then refrigerate until fully set, typically 2-4 hours.
